- Develops detailed food purchase specifications and standard recipes.

- Possesses expertise in food and wine pairing and assists in curating the wine list.
Job Summary
Serves as a direct ambassador of the Old Marsh culture, overseeing all food and pastry production for the club’s restaurants, banquet functions, and additional outlets. Responsible for menu development, purchasing specifications, and recipe creation. Supervises the kitchen team, manages departmental food and labor budgets, and ensures the delivery of superior food quality and sanitation. This role places a strong emphasis on banquet and tournament-style events in addition to daily dining services.
Essential Duties and Responsibilities
- Recruits, trains, schedules, supervises, and evaluates all kitchen staff.
- Designs menus in partnership with the Director of Food and Beverage for all outlets and special events.
- Organizes and coordinates kitchen operations to ensure food preparation meets budgeted labor costs, maintains technical precision, and achieves economic efficiency.
- Authorizes requisitions for food products and necessary supplies.
- Maintains exemplary standards of sanitation, cleanliness, and safety throughout kitchen areas.
- Establishes systems to minimize waste, manage inventory, and prevent theft.
- Develops and enforces standard recipes and preparation techniques to ensure consistent quality and cost control; establishes portion sizes and menu pricing.
- Prepares budget data, monitors food and labor costs, and initiates corrective measures to achieve financial objectives.
- Participates in staff and management meetings to align culinary operations with overall club goals.
- Supervises and personally prepares items requiring advanced culinary skills.
- Regularly evaluates food products to ensure adherence to quality standards.
- Partners with food and beverage managers to continually elevate the dining experience.
- Oversees the employee meal program, ensuring nutritious options are available.
- Develops, updates, and enforces departmental policies reflecting industry best practices.
- Manages cleaning and maintenance schedules for all kitchen areas and equipment.
- Ensures staff participation in service line-ups and meetings.
- Engages with members by periodically visiting the dining room.
- Conducts tasting panels for potential new menu items.
- Reviews and approves food product specifications and buffet presentations.
- Leads culinary demonstrations and classes for club members.
- Implements and monitors OSHA safety protocols and maintains accurate Material Safety Data Sheets.
- Enforces rigorous sanitation and hygiene practices at all times.
- Undertakes special projects as assigned by the Director of Food & Beverage or General Manager.
Licenses and Special Requirements
- Certification by the American Culinary Federation (ACF) or a comparable professional hospitality organization.
- Current food safety certification.
Physical Requirements and Work Environment
- Ability to stand for extended periods and perform activities including walking, climbing stairs, bending, stretching, twisting, reaching, kneeling, and crouching.
- Capability to push, pull, or lift up to 50 pounds.
- Repeated engagement in continuous, repetitive motions.
